Peanut Butter Stone Fruit Cobbler
Summer is the season for stone fruit, so naturally we whipped up a recipe with a few of our favorites: cherries, peaches and our Peanut Butter Perfect Bar. This Peanut Butter Stone Fruit Cobbler has a cinnamon-oat peanut butter base, is made to be gluten free and goes perfectly with vanilla ice cream. This recipe is a dream for any get together and is an easy way to make sure you use any fruit you may have laying around this summer. Ingredients
Filling
- 3 pounds fresh stone fruit, chopped (we used peaches and cherries)
- ¼ cup one-to-one gluten-free flour
- 1 cup granulated sugar
- ¼ teaspoon sea salt
Crumble
- 4 Peanut Butter Perfect Bar
- ¼ cup light brown sugar
- 2 teaspoons ground cinnamon
- 1 ½ cup gluten-free, old-fashioned oats
- ¼ cup one-to-one gluten-free flour
- ½ cup (1 stick) unsalted butter, cold and cut into small pieces
Topping
- 1-2 pints vanilla ice cream
Instructions
- Preheat oven to 375°F and grease a 9×13” pan with butter.
- In greased pan, stir together stone fruit, flour, sugar, and sea salt. Set aside and stir occasionally.
- In a food processor, pulse Perfect Bar with brown sugar and cinnamon to chop.
- Add oats, flour, and cold butter then pulse until mixture is coarsely combined.
- Crumble the Perfect Bar topping over the stone fruit in pan.
- Bake 35-45 minutes, or until top is golden and fruit is bubbling.
- Let cool 20+ minutes.
- Serve with vanilla ice cream and enjoy!
