Is Cauliflower The New Kale?

There may be a new superfood in town, and it’s been hiding in plain sight. Cauliflower has been around forever, so let’s find out why nutritionists think this white vegetable is all the rage.

Cauliflower is part of the cruciferous family, along with superfoods like broccoli, Brussels sprouts, and kale. This powerful veggie helps fight free radical damage to the arteries and hels prevent heart disease. Its high vitamin C and vitamin K values provide anti-inflammatory benefits and help support bone health.

Aside from its bountiful amounts of vitamins and minerals, cauliflower’s secret weapon is its cancer-fighting compound called glucosinolates. Along with other plant chemicals found in cauliflower, glucosinolates have been shown to prevent lung and stomach damage due to carcinogens.

When people think of cauliflower, they often just think of the white relative of broccoli. But don’t be fooled – cauliflower can take on both orange and purple hues. Purple cauliflower get its color from the presence of the antioxidant anthocyain, which is also found in red cabbage and red wine. The orange variety was discovered in Canada in 1970 and comes from a genetic mutation that took years of crossbreeding in order to make it widely available for purchase. Orange cauliflower actually contains about 25% more vitamin A than its white counterpart.

Surprisingly, cauliflower is extremely versatile. It can be roasted, steamed, mashed, and grilled. Carb-conscious eaters favor this superfood as an alternative to starches like rice, bread, and potatoes.
