These cute little muffins are perfect for an on-the-go breakfast! Grab a couple on your way to work; eat a couple before the gym to fuel your workout; or simply top with peanut butter any time and devour. Try the recipe below and let us know how yours turn out!
Recipe:
- ½ cup whole wheat flour
- 1 cup oatmeal
- 2 Cranberry Crumble Perfect Bars, diced small
- 1 teaspoon baking powder
- pinch salt
- 1 ripe banana, mashed
- 1 egg white
- 1 teaspoon vanilla extract
- ½ cup almond milk
- ¼ cup honey
Instructions:
- Preheat oven to 350 degrees.
- In a large bowl, combine flour, oatmeal, Perfect Bars, baking powder and salt.
- In a separate bowl, combine banana, egg white, vanilla extract, almond milk and honey.
- Add wet ingredients to dry ingredients.
- Grease a mini muffin tin and fill ¾ full with batter.
- Bake for about 10 minutes or until toothpick comes clean.
- Let cool on a cooling rack and enjoy!
