It’s not toxins when exposed to high heat that you need to be worried about, it is the fact that when exposed to heat, mono and polyunsaturated fats oxidize and transform into trans fatty acids. Oils like olive oil and other unsaturated fats should be used unheated to take advantage of their health benefits.
