Epicurean Adventures: Spring Edition Recipes

There’s something refreshing about the changing of seasons, whether its spending more time at the beach with friends, the sun staying out longer, or the beginning of barbeque season, the warmer weather definitely brings people together. As spring continues to thrive and you are spending more quality time with loved ones, the need for new food is undeniable.  Lucky for you, we have three fresh recipes that will fit perfectly into any and all spring activities!

PB & J Pancakes

Ingredients:

  • Pancake mix
  • Strawberries
  • Peanut Butter Perfect Bar
  • Strawberry Jam

DIY:

  1. Make pancakes. We used Gluten Free pancake and waffle mix from Trader Joe’s, which was an ‘just add water’ mix. If you use a mix that calls for eggs and milk combine the mixture together, wisk, and begin to make pancakes.
  2. Cut strawberries and Peanut Butter Perfect Bar.
  3. Spread strawberry jam in-between each pancake.
  4. Top with strawberries and Peanut Butter Perfect Bar chunks.
  5. Dig in to your PB&J breakfast.

Almond Butter Sweet Potato

Ingredients:

  • Sweet Potato
  • Almond Butter Perfect Bar
  • Cinnamon

DIY:

  1. Preheat oven to 350°
  2. Wash and cut sweet potato vertically.
  3. Place Almond Butter Perfect Bar in the middle and bake for 45 minutes.
  4. Sprinkle cinnamon and enjoy!

Zoodles with Almond Butter Sauce

Ingredients:

  • Zoodles (zucchini noodles) – these can be purchased at Whole Foods or made at home with a zoodler, like THIS.
  • 1 Tbsp Honey
  • 3 Tbsp Soy Sauce
  • 1 Tsp Toasted Sesame Oil
  • 1 Tbsp Sesame Seeds
  • Green Onions (chopped white + green)
  • Cilantro (chopped)
  • Lime
  • Almond Butter Perfect Bar

DIY:

  1. Combine 1/2 of the Almond Butter Perfect Bar, soy sauce, honey, sesame oil, juice from the lime, water, salt and pepper into a food processor then pulse until creamy. Transfer to a small bowl.
  2. Cut the reminder of the Perfect Bar into chucks.
  3. Place the zucchini noodles and green onions into a medium bowl.
  4. Add the almond butter sauce and toss to combine thoroughly.
  5. Top with sesame seeds, Almond Butter Perfect Bar chunks, and chopped cilantro.
  6. Eat your heart out!
