Why deprive yourself of something that tastes so good when you could essentially have it year-round? We couldn’t come up with a good answer to that question, so we were beyond stoked to get Katie’s quick and easy gluten-free recipe for Flourless Maple Almond Sweet Potato Muffins. The recipe name may be a mouthful, but you won’t mind after you’ve made these and your mouth is actually full of these delicious little muffins.

• 2 Maple Almond Perfect Bars, room temperature
• 1 cup sweet potato (or pumpkin) puree/mash
• 3/4 cup rolled oats, gluten free optional
• 1 large egg
• 2 tbsp. unsweetened almond milk
• 1 teaspoon vanilla extract
• 1/2 teaspoon ground cinnamon
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
