Purple cauliflower get its color from the presence of the antioxidant anthocyain, which is also found in red cabbage and red wine. The orange variety was discovered in Canada in 1970 and comes from a genetic mutation that took years of crossbreeding in order to make it widely available for purchase. Orange cauliflower actually contains about 25% more vitamin A than its white counterpart.
Surprisingly, cauliflower is extremely versatile. It can be roasted, steamed, mashed, and grilled. Carb-conscious eaters favor this superfood as an alternative to starches like rice, bread, and potatoes.
