Raspberry Citrus Overnight Oats Topped with Perfect Bar

We love eating our overnight oats chilled and fresh-from-the-fridge, just like our bars. That’s why we’re taking your average overnight oats and giving it an upgrade with this Raspberry Citrus Overnight Oats recipe.

This bowl is instantly turned into a nutritious and delicious breakfast by topping it with our Dark Chocolate Chip Peanut Butter Perfect Bar, oranges and chia seeds. A little nuttiness and sweetness makes for a nice addition to each bite. Ingredients

Serving Size: 6

  • 3 cups gluten-free old-fashioned rolled oats
  • 3 tbsp chia seeds
  • 1 tbsp ground flaxseeds (optional)
  • 2 cups oat milk, or milk of choice
  • 1 cup freshly squeezed orange juice + 1 tsp orange zest
  • 1 cup non-dairy yogurt or Greek yogurt
  • 1 cup of fresh raspberries
  • 2 tbsp maple syrup
  • 1 tbsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • ¼ tsp sea salt

For Serving 

2 to 3 oranges, peeled and sliced into segments

Instructions

  1. Combine the oats, chia seeds, and ground flax in a bowl. Stir in the oat milk, orange juice, orange zest, yogurt, maple, vanilla, cinnamon, and salt and mix well to combine. Place in the fridge to thicken for at least 1 hour or overnight until thick and creamy.
  2. Mash the raspberries with the maple syrup in a small bowl with a fork to make a quick and fresh raspberry topping.
  3. To serve, spoon the oat mixture into bowls and top with the fresh raspberry sauce, orange segments, and Perfect Bar pieces.

*The oats can be stored in an airtight container in the fridge for up to 4 days.
